TWO YOUNG INSPIRING ENTREPRENEURS
"When most high school graduates move out of their parents' house and into a college dorm, healthy eating habits go out the window, laundry doesn't get done and life can lack structure. But Randon Moore, 24, and Gwyenth Yvonne, 22, aren't ordinary college students. They started cooking vegan chicken in a college kitchen and selling meals to friends. Now they've launched a food truck called The Beet Box, which is so popular that they are seeking a commercial kitchen to grow from one truck in Stillwater, Oklahoma, to nationwide distribution."- HAILEY WELCH, THE BEET.
CHANGING CATTLE COOUNTRY ONE VEGAN MEAL AT A TIME
"It’s no secret Oklahoma is beef country. The state has spent $60 million from the coronavirus relief package to help expand meat processing. Oklahoma lawmakers enacted a law to help promote ranchers who raise and slaughter their cattle in the state. That hasn’t stopped Gwyneth Yvonne and Randon Moore from starting a vegan food truck in Stillwater, Oklahoma.
“Gwyn and I like to say, ‘We’re changing cattle country, one vegan meal at a time,’” Moore says. Their business, called The BeetBox, started from their apartment when the duo were students at Northwestern Oklahoma University. Other students lined up outside the apartment waiting for chickenless sandwiches and fries loaded with vegan cheese, vegan bacon and jalapeños, Yvonne says. At first, they didn’t tell them the sandwiches were vegan.
“I think that's what surprises people the most, is our chicken, because people don't think it's vegan at first until we try to convince them, like, ‘trust us, it's vegan,’” Yvonne says. “That's when we knew we had something special, and we knew we had to take it to the next level and open a food truck together.”"- SETH BODINE, HARVEST PUBLIC MEDIA.
PLANT BASED FOOD TRUCK LAUNCHES BY STUDENTS ADMIST PANDEMIC
"Two college students opened their own plant-based food truck in the US amidst the aftermath of the COVID-19 pandemic.
The Beet Box opened in Cattle Country, Oklahoma last year. Upon leaving college, owners Randon Moore and Gwyneth Yvonne started the business to provide more vegan options in the area.
The Beet Box’s menu features plant-based versions of Mid-Western classics. Items including Chickless Sandwiches with vegan bacon ranch dressing or maple sriracha.
Also on the menu are Coconut Shrimp Tacos and Vegan Lobster Rolls, as well as home-made cakes. Additionally, the team serves plant-based desserts in mason jars.
